Bouillabaisse Soup

Bouillabaisse Soup by Misty

During the Welcoming Feast in Harry Potter and the Goblet of Fire, Fleur Delacour of the Beauxbatons Academy of Magic, comes over to the Gryffindor table to take this hearty and delectable dish.

This dish is basically a fish soup containing various kinds of cooked fish and shellfish and vegtables, flavored with a variety of herbs and spices such as garlic, orange peel, basil, bay leaf, fennel and saffron.

Ingredients

  • 1 1/2 tablespoon Minced Garlic
  • 1 cup Chopped Onions
  • 1 can Diced Tomatoes
  • 3/4 teaspoons Fennel Seed
  • 1 tablespoon Salt
  • 1 1/2 teaspoon Pepper
  • 3 teaspoons Butter
  • 2 1/2 cups Hot Water
  • 8oz Clam Juice ((1/2 Bottle))
  • 1lb Fresh Mussels
  • 10 Littleneck Clams
  • 1lb Unpeeled Shrimp
  • 2lb Fish Fillets ((Bass, Grouper, or your favorite))
  • 1/3 cup Olive Oil

Directions

Step 1
Wash and scrub the mussels and clams (observe all safety rules when dealing with seafood)
Step 2
Bring 2 cups of water to a boil in large pot. Add the mussels and cover the pot. Steam mussels for 6-8 minutes (when the mussels open)...any mussels that do not open must be thrown away. Remove from heat.
Step 3
Cut the fish into 1 inch thick slices.
Step 4
Heat the oil in a large stew pot. Add the garlic, onions, tomatoes, fennel, salt, and pepper. Add the broth from steaming the mussels and butter to the pot.
Step 5
Add remaining hot water and clam juice, and bring to a boil.
Step 6
Add the clams and fish and continue to boil for 6-8 minutes.
Step 7
Add the mussels along with the shrimp and boil for a final 5 minutes
Step 8
To Serve: Scoop out a generous portion of seafood and ladle the broth over it. Serve with a large chunk of your favorite rustic style bread

House Sorting Cupcakes

House Sorting Cupcakes

Made with a cream filling and Vanilla Buttercream topping, these fun treats are a delicious way to sort guests into Hogwarts houses on the fly and useful for team activities. More so, they're also just a wonderful conversation starter at any Potter themed event that is sure to create some fond memories of your first ever cupcake sorting.

Ingredients

Optional

  • 4 Piping Bags (They should ideally have large tips.)

Cupcakes

  • 24 Cupcakes (Modify the quantity of cupcakes to suit.)
  • Food Coloring (Use any variation of the Hogwarts Houses colors)

Cream Filling

  • 1/2 cup Whole (Vitamin D) Milk (This should not be 2%, 1% or fat-free. If unavailable, then use appropriate alternative.)
  • 3 tablespoons Flour
  • 1/2 teaspoon Vanilla
  • 1/2 cup Butter (This should not be margarine and should be at room temperature.)
  • 1/2 cup Granulated Sugar (This should not be powdered sugar.)

Vanilla Buttercream

  • 1/2 cup Unsalted Butter (Use at room temperature.)
  • 1/4 teaspoon Salt
  • 2-3 tablespoons Heavy Cream
  • 2 teaspoons Vanilla Extract

Vanilla Butercream

  • 1lb Confectioners' Sugar

Directions

Cream Filling
Step 1
While your cupcakes are baking or should they already have been prepared begin preparing the cream filling. In a small saucepan, whisk flour into the milk until smooth. Heat, stirring constantly, until very thick, thicker than pudding.
Step 2
Remove and allow to cool fully. You can sit the pan in an ice-bath if you don’t want to wait.
Step 3
In your mixer, beat butter and sugar together until fluffy. Add vanilla.
Step 4
Once cool, add the flour/milk/vanilla mix to the butter and sugar and beat until fluffy. When finished, it will look like whipped cream, but be much thicker.

Note: You can also shorten this portion of the recipe by just squeezing a bit of tinted Buttercream into the middle instead of the actual cream filling.
Step 5
Portion out into 4 bowls and tint one blue, one red, one green, and one yellow for the House colors. Set aside.
Step 6
After your cupcakes are cool, add your first color to a piping bag fitted with a tip. Stick your tip down into your cupcake and squeeze. You will see the cupcake puff up a bit. This is how you know you have enough. If you add too much, your cupcake will crack open.
Step 7
Repeat with the other colors. Scrape off any excess cream so the color will not show outside of the icing.
Vanilla Buttercream
Step 8
This section deals with the Vanilla Buttercream topping for the cupcakes. In a large bowl, or the bowl of a standing mixer, beat the butter for 3 minutes.
Step 9
Beat in the sugar and salt.
Step 10
Add 2 tablespoons heavy cream and whisk on high for 4 minutes, until fluffy. If frosting is too thick, add more cream, 1/2 teaspoon at a time, until desired consistency.
Step 11
Stir in the vanilla.
Step 12
Swirl on top of cupcakes taking care to cover any hints of the color below.
